I‘m grain-free, healthy food and treat crazy! I love photography, food styling and experimenting with new flavours and ingredients from my travels and experiences. 
I’ve loved baking from a young age, however more recently I’ve wanted to learn and experiment with food after becoming intolerant to grains and gluten. I wanted to create delicious and healthy meals that were free from refined sugar, grains and gluten, yet still tasted like the real deal. I don’t want my creations to taste healthy but I want people to feel healthy and energised after eating them. 
 

Chocolate chip brownies

5 Healthy Chocolate Treats You Must Try

Ingredients – makes 16
1 can of butterbeans, drained and rinsed
220g ground almonds
80g buckwheat flour
85g raw cacao powder
2 pinches of salt
300ml hazelnut milk – any nut milk will work
 60g coconut oil
100g smooth almond butter
100ml maple syrup
100g coconut sugar
1 tsp vanilla extract
 45g raw chocolate/refined sugar-free chocolate, cut into chunks
Method
 Preheat the oven to 180 degrees and line a square tin with parchment.
Pop the first set of ingredients into a food processor and blend until combined and smooth.
 Pop the second set of ingredients into a small pan and place over a low heat.
 Once melted and combined, pour the contents into the blender with the first set of ingredients and blend until smooth.
 Add the chocolate chunks and pulse to combine.
Pour the brownie batter into the lined tray and level with a spectacular.
Pop in the oven for 25 minutes – cooked through.
Remove from the oven and cut into 16 slices, leave to cool a little before removing from the tin and popping on a wire rack to cool fully.

Quinoa choc chip crispy buns

 Ingredients – makes twelve
 60g quinoa puffs
70g peanuts
105g raisins
25g raw chocolate/refined sugar-free chocolate, chunked
 40g coconut oil
60g date syrup
2 pinch salt
4 tbsp smooth cashew butter
 2 tbsp maple syrup
Method
 Mix the first set of ingredients together in a large bowl.
 Melt the second set of ingredients in a pan until smooth and combined.
 Pour the wet mix into the dry mix and mix well to combine.
 Line a 12 case cupcake tray with cases.
 Scoop the mix into the lined tray.
Pop in the fridge to set.

Choc chip banana bread muffins

Ingredients – makes 12 muffins/large cupcakes
 335g really ripe mashed bananas
200g ground almonds
35g buckwheat flour
3 tbsp ground flaxseeds
0.5 tsp bicarbonate of soda
9 tbsp nut milk
1 tsp vanilla extract
2 tbsp maple syrup
40g coconut oil, melted
45g dark chocolate/refined sugar-free or raw chocolate, cut into small chunks
Method
 Preheat the oven to Gas mark 5 and line a muffin tray with cases.
 Mash the bananas together in a large bowl with the back of a fork until smooth.
 Pour in the almonds, flour, flax and bicarb and mix well.
 Add the milk, vanilla, maple and coconut oil.
Stir to combine.
 Fold through the chocolate chunks and then divide the mixture evenly between the 12 cases.
 Bake for 30 minutes – until golden on top.
 Pop the muffins on a wire rack to cool.

Peanut butter choc chip blondies

 Ingredients – cuts into 16 pieces
 200g ground almonds
50g buckwheat flour
50g coconut sugar
 50g coconut oil
160g crunchy peanut butter
70ml maple syrup
30g date syrup
1 tsp vanilla extract
 200ml nut milk
 45g dark chocolate/raw or refined sugar free chocolate, cut into chunks
Method
 Preheat the oven to 180 degrees and line a square tin with parchment.
Mix the first set of ingredients together in a bowl.
 Pop the second set in a small pan and place over a low heat until melted, combined and silky.
Pour the wet mix into the dry with the milk and mix well.
Add the chocolate chips and fold to distribute.
Pour the batter into the lined tin, level with the back of a spoon and then put in the oven for 20 – 30 minutes – until golden.
Leave to cool for 5 minutes before slicing into 16 pieces and putting on a wire rack to cool completely.

Chocolate chip cookies

 Ingredients – makes 20
 110g buckwheat flour
80g ground almonds
60g coconut sugar
0.5 tsp salt
 40g coconut oil
150g smooth almond butter
50g maple syrup
50ml hazelnut milk – any nut milk will do
 10g quinoa puffs
45g raw chocolate/refined sugar-free or raw chocolate, chopped into small chunks
Method

Line a large tray with parchment.
Preheat the oven to Gas mark 6.
Mix the first set of ingredients together in a large bowl.
In a small pan over a low heat, melt the oil, almond butter and syrup together.
Once melted, combined and smooth, pour into the dry mix with the milk and mix well.
Stir through the quinoa puffs and chocolate chunks.
Roll the mix into 20 equal balls and then flatten to about 1cm thick before popping on the lined tray.
Bake for 10 – 15 minutes – until golden at the edges.
Remove from the oven and pop on a wire rack to cool – keeps for 2 – 5 days.
